INGREDIENTS (Nutrition)

* 1 egg
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1 pound ground beef
* 1/2 cup fine dry bread crumbs


DIRECTIONS

1. Preheat an outdoor grill for high heat and lightly oil grate.
2. In a medium bowl, whisk together egg, salt and pepper. Place ground beef and bread crumbs into the mixture. With hands or a fork, mix until well blended. Form into 4 patties approximately 3/4 inch thick.
3. Place patties on the prepared grill. Cover and cook 6 to 8 minutes per side, or to desired doneness.

Skippy Burgers

Original recipe yield 4 hamburger patties


INGREDIENTS (Nutrition)

* 1 pound ground beef
* 1/2 cup dry bread crumbs
* 2 tablespoons Worcestershire sauce
* 1/2 teaspoon garlic salt
* ground black pepper to taste
* 1 (12 fluid ounce) can or bottle dark beer
* 1/2 cup finely chopped onion
* 1 fresh jalapeno chile pepper, finely chopped



DIRECTIONS

1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. In a large bowl, mix together ground beef, dry bread crumbs, Worcestershire sauce, garlic salt, ground black pepper and approximately 1/2 of the dark beer. Mix until firm enough to form patties, using remaining dark beer as necessary.
3. Shape ground beef mixture into 4 thick patties. Create a well in the center of the patties, and fill with onion and jalapeno. Form the ground beef mixture back around the onions and jalapenos, and flatten.
4. Place patties on the prepared grill, and cook 5 minutes per side, or to desired doneness.

INGREDIENTS (Nutrition)

* 5 fresh jalapeno peppers
* 4 pounds ground beef
* salt and pepper to taste
* 1 egg
* 1/4 cup steak sauce, (e.g. Heinz 57)
* 1/4 cup minced white onion
* 1 teaspoon hot pepper sauce (e.g. Tabasco™)
* 1 pinch dried oregano
* 1 tablespoon Worcestershire sauce
* 1 teaspoon garlic salt
* 1/4 cup crushed Fritos® corn chips
* 8 large potato hamburger buns
* 8 slices pepperjack cheese



DIRECTIONS

1. Preheat a grill for high heat. When the grill is hot, roast the jalapeno peppers until blackened on all sides. Place in a plastic bag to sweat and loosen the blackened skin. Rub the skin off, then seed if desired, and chop.
2. In a large bowl, use your hands to mix together the ground beef, salt, pepper, egg, steak sauce, onion, hot pepper sauce, oregano, Worcestershire sauce, garlic salt and Fritos®. Divide into 8 balls, and flatten into patties.
3. Grill patties for 10 to 15 minutes, turning once, or until well done. I always drink one beer, then flip, drink another beer, then remove from the grill and place on buns. Top each one with a slice of pepperjack cheese and pig out!

Hamburger Potato Casserole

* 1 pound lean ground beef
* 3 cups peeled and thinly sliced potatoes
* 1 (10.75 ounce) can condensed cream of mushroom soup

DIRECTIONS

* 1 (1 ounce) package dry onion soup mix
* 1/2 cup dried minced onion
* 3/4 cup mayonnaise

* 2 (8 ounce) packages dinner rolls
* 1 (16 ounce) jar dill pickle slices, drained


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Line a medium baking sheet with aluminum foil.
2. In a medium skillet over medium high heat, stir together ground beef, dry onion soup mix and dry minced onion. Cook until beef is evenly brown. Remove from heat, drain and stir in mayonnaise and Cheddar cheese.

INGREDIENTS (Nutrition)

* 1 1/2 pounds potatoes, peeled and cubed
* 1/2 cup milk
* 1 tablespoon butter
* 1 pound ground beef
* 4 eggs
* 4 slices bread, toasted
* 1 (16 ounce) can baked beans

DIRECTIONS

1. Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, then mash with milk and butter until smooth. Spoon into a pastry bag with a large round tip; set aside. Preheat oven on broiler setting.
2. Heat a large heavy skillet over medium heat. Shape ground beef into 4 patties, and fry until evenly brown, about 5 minutes on each side. Fry the 4 eggs.
3. Place a burger on each piece of toast. Pipe mashed potato around the edge to form a wall on the edge of the toast. Heat the beans, and spoon onto each burger, inside the wall of potato. Cover with a slice of cheese.
4. Place burgers under broiler until cheese is melted, then top each with a fried egg.

* 2 (1 pound) loaves frozen bread dough, thawed

* 1/4 cup margarine, melted



DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain fat. Stir in cabbage and onion soup mix; cook 5 minutes longer, or until lightly browned. Set aside.
2. Roll one loaf of bread dough into a 16x8 inch rectangle, then cut into eight 4 inch squares. INGREDIENTS (Nutrition)

* 1 (16 ounce) package frozen hash brown potatoes, thawed
* 1/2 pound ground beef
* 1 small onion, minced
* 1 cup milk
* 2 eggs, beaten
* 1 tablespoon cornstarch
* 1/2 pound sharp Cheddar cheese, shredded
* 1/4 teaspoon liquid smoke flavoring
* 1 (3 ounce) jar real bacon bits
* 2 teaspoons Worcestershire sauce
* salt
* 1/4 pound sharp Cheddar cheese, shredded


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie dish.
2. Press hash browns onto the bottom and sides of pie dish. Bake in preheated oven for 25 to 30 minutes, or until it begins to brown.
3. Meanwhile, place ground beef and onion in a large, deep skillet. Cook over medium-high heat until beef evenly brown. Drain, crumble and allow to cool. In a medium bowl, whisk together milk, eggs and cornstarch. Stir in 1/2 pound shredded cheese and ground beef mixture. Mix in the liquid smoke, bacon bits, Worcestershire sauce and salt. Pour into hash brown crust.
4. Bake in preheated oven for 20 minutes. Remove from oven, sprinkle 1/4 pound of grated sharp cheddar on top, and place back in the oven. Bake 15 minutes, or until filling is puffed and golden brown. Let stand for 20 minutes before serving.

Hamburger Stroganoff

INGREDIENTS

* 1 pound ground beef
* 1/4 cup chopped onion
* 1 garlic clove, minced
* 1 (10.5 ounce) can condensed beef consomme, undiluted
* 1 (4 ounce) can mushroom stems and pieces, undrained
* 3 tablespoons lemon juice
* 1/4 teaspoon pepper
* ADDITIONAL INGREDIENTS (for each dish):
* 2 cups cooked spiral pasta
* 1/2 cup sour cream
* 2 tablespoons water


DIRECTIONS

1. In a skillet over medium heat, cook beef, onion and garlic until meat is no longer pink; drain. Stir in consomme, mushrooms, lemon juice and pepper. Place half of the mixture in a freezer container; cover and freeze for up to 3 months.
2. To the remaining meat mixture, add pasta, sour cream and water; heat through (do not boil). To use frozen meat mixture: Thaw in the refrigerator overnight. Place in a saucepan or skillet and prepare as directed.

2. Preheat oven broiler.

* 1 pound sliced bacon, diced
* 5 pounds ground beef chuck
* 1 large onion, chopped
* 1/4 cup steak sauce

DIRECTIONS

1. Preheat a grill for high heat.
2. Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. Pour into a large bowl, and mix with steak sauce and ground chuck using your hands. Form into 16 patties.
3. Place patties on the grill, and cook for 5 minutes per side, or until well done. Place a slice of cheese on top of each one during the last minute.

Hearty Hamburger Soup

INGREDIENTS (Nutrition)

* 1 1/2 pounds ground beef
* 1 onion, minced
* 4 carrots, minced
* 3 celery ribs, thinly sliced

* 2 teaspoons red wine vinegar
* 2 teaspoons sugar
* 1 cup mayonnaise
* 1/2 cup ketchup

* 1 pound ground sirloin
* 1 pound chorizo sausage
* 1 tablespoon vegetable oil
* 1 medium onion, chopped
* 1 roasted red pepper, quartered
* 1 cup Ranch dressing
* 1 pinch powdered saffron
* 1 teaspoon Spanish paprika
* 1 tablespoon vegetable oil
* 3 medium onion, sliced
* 1 tablespoon brown sugar
* salt and pepper to taste
* 4 soft egg buns or brioche
* 1 tablespoon softened butter
* 4 ounces manchego cheese, grated


DIRECTIONS

1. In a large bowl, mix together the ground sirloin and chorizo using your hands. Set aside to let the flavors blend.
2. Heat one tablespoon of oil in a skillet over medium-high heat. Add one chopped onion, and saute until tender. Transfer the onion to a blender, and add the red pepper, Ranch dressing, saffron, and paprika. Pulse until fairly smooth. Refrigerate until needed.
3. Heat the remaining oil in a large skillet over medium heat, and add the remaining onions, brown sugar, salt and pepper. Cook and stir for about 15 minutes until the onions are golden brown. Set aside.
4. Preheat the grill for high heat. Form the meat into four patties, slightly larger than the buns.

6. Place burgers onto buns, and top with caramelized onion and the roasted pepper ranch sauce. Sprinkle with a few shavings of manchego cheese, and place the top of the bun on top.

* 1 cup milk
* 1/2 teaspoon black pepper

Mom's Big Burgers

* 2 pounds lean ground beef
* 1 (1 ounce) envelope dry onion soup mix
* 1/2 cup water
* 2 cloves garlic, chopped
* 1 tablespoon hot pepper sauce
* 1 pinch chili powder
* 1/4 teaspoon ketchup
* 1/4 teaspoon prepared yellow mustard
* 1 pinch ground black pepper
* 4 cracked wheat hamburger buns
* 4 slices pepperjack cheese
* 1 avocado - peeled, pitted and sliced
* 1 bunch green onions


DIRECTIONS

1. Preheat the oven's broiler.
2. In a large bowl, mix together the ground beef, onion soup mix, water, garlic, hot pepper sauce, chili powder, ketchup, mustard and pepper using your hands. Pat into 4 large thick patties. Place them on a broiler pan.
3. Broil the burgers for about 15 minutes per side, or until well done. Place buns on the broiler pan and toast briefly. Place whole green onions on the broiler pan at the same time, and just toast until limp.
4. Place burger patties onto the bottom halves of the buns and top each one with a slice of cheese and some avocado slices. Top with the top buns. Serve with green onions.

Hamburger Cake

INGREDIENTS (Nutrition)

* 1 (18.25 ounce) package white cake mix
* 1 (18.25 ounce) package chocolate cake mix
* yellow paste food coloring
* brown paste food coloring
* 3/4 cup prepared chocolate frosting
*
* 24 orange chewy fruit-flavored candy squares
* 12 leaf-shaped spearmint gumdrops
* 3 large red gumdrops
* 4 large white gumdrops
* 6 candy lime slices
* 1 tablespoon sesame seeds



DIRECTIONS

1. Preheat oven according to cake mix directions. Butter and flour one 8 inch round and one 9 inch round cake pan and one 2 quart ovenproof bowl 8 inches in diameter.
2. Prepare cake mixes. Pour 1 3/4 cups of the white mix into the 8 inch round cake pan, and the rest into the 2 quart bowl. Pour 1 3/4 cups of the chocolate mix into the 9 inch round pan.
3. Bake 8 inch cake for 25 minutes, 9 inch cake for 20 minutes and bowl cake for 1 hour or until toothpick inserted into centers comes out clean. Cool in pans on racks 10 minutes. Remove from pans; cool completely on racks.
4. In separate small bowls, tint small amounts of vanilla frosting red and yellow, to use as ketchup and mustard. Tint remaining vanilla frosting light brown, using brown and yellow food coloring.
5. For bun bottom, frost the 8 inch cake with light brown frosting.
6. For hamburger patty, spread top and sides of 9 inch chocolate cake with chocolate frosting Lightly press all around sides of cake with folded paper towel, pulling towel straight out to create rough edge of burger. center cake on top of bun bottom.
7. For cheese, arrange orange fruit chews in single layer on microwave-safe plate. Microwave on High 10-15 seconds or until slightly softened. With hands, press and flatten chews together to form 9 inch square. Place on top of hamburger patty. On work surface sprinkled with granulated sugar roll out 5 leaf-shaped gumdrops to 1/8 inch thickness to form 1 large lettuce leaf; repeat rolling with 6 more gumdrops to form another leaf. Arrange over cheese near edges of burger. For tomatoes, roll out red gumdrops individually to 1/8 inch thickness. Arrange over lettuce around burger edges. For onion rings, roll out white gumdrops to 1/8 inch thickness. With round cookie cutters or sharp knife cut out circles; cut 1/4 inch thick rings from circles with small cutters. Re-roll scraps to make additional rings; arrange rings over tomatoes. Arrange fruit-slice candies over onions for pickles. Pipe red and yellow icing around edges of burger for ketchup and mustard.
8. For bun top: If necessary, trim bowl cake so that it will be flat on the bottom when inverted. Invert firm paper plate onto work surface. Center bowl cake, trimmed side down, on top of plate. Starting from the top, spread remaining light brown frosting in lines down sides of cake, turning plate after each section. Sprinkle with sesame seeds. Carefully place on top of the cake.

* 2 pounds lean ground beef
* 1/2 onion, finely chopped
* 5 cups milk
* 2 tablespoons chicken bouillon granules
* 2 tablespoons butter or margarine
* 1 teaspoon ground sage
* salt and pepper to taste
* 1/2 cup all-purpose flour


DIRECTIONS

1. Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
2. Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
3. Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.

* 1 pound ground beef chuck
* 1 dash hot pepper sauce, or to taste
* 1 avocado - peeled, pitted and sliced
* 3 slices Monterey Jack cheese, cut into 2 inch wide strips
* 3 jumbo English muffins, split and toasted
* 3 teaspoons Dijon mustard
* 1 (4 ounce) can diced green chile peppers, drained



DIRECTIONS

1. Divide the ground beef into three even portions. Season each one with some hot pepper sauce. I ball up the meat, and poke my finger into it, then fill the hole with hot sauce. Flatten into patties just a little larger than the English muffins.
2. Heat a skillet over medium-high heat. Cover, and cook the beef patties for about 4 minutes per side, or until well done. Top each patty with two pieces of cheese in an criss cross pattern. Cover, and turn off the heat.
3. Arrange the toasted English muffins on a serving plate. Spread the bottom half with a thin coating of Dijon mustard. Place a few slices of avocado over the mustard, and use a fork to mash into the nooks and crannies. Place the beef patties on top of the avocado, and top with a layer of green chilies. Plop the other halves of the English muffins on top. Serve and enjoy!

Indian Turkey Burgers With Lime, Cucumbers & Chutney

INGREDIENTS (Nutrition)

* 4 large unpeeled garlic cloves
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1 teaspoon ground coriander
* 3/4 teaspoon ground cumin
* 1/4 teaspoon ground cinnamon
* 1/8 teaspoon ground cloves
* 1 1/4 pounds ground turkey
* 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
* 2 tablespoons minced fresh ginger
* 1 jalapeno pepper, seeded and minced
* 1/2 large cucumber, sliced thin
* 1 tablespoon fresh lime juice
* 1/4 cup Major Grey Chutney
* 4 small (4 inch) pita breads


DIRECTIONS

1. Set garlic in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
2. Mix salt, pepper, coriander, 1/2 tsp. cumin, cinnamon and cloves in a small bowl.
3. Break up turkey in a medium bowl; add garlic, spinach, spice mixture, ginger and jalapeno; stir lightly with a fork to combine. Divide turkey mixture into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 1/2 inches wide. Refrigerate.
4. Mix cucumber, lime juice, 1/4 tsp. cumin and salt to taste in a small bowl. Refrigerate until ready to serve.
5. For charcoal grill: Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 5 minutes per side.
6. Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Place a burger on each of 4 pita halves. Top with cucumbers and chutney, then remaining pita halves.
